Ingredients:
Tamarind/Imli – 100 grams
Hot Water – 2 cups
Oil – 1 tbsp
Cumin seeds – 1/2 tsp
Asafoetida – 1/4 tsp
Jaggery – 100 gms
Salt -1 tsp
Red Chilli Powder – 1/2 tsp
Saut/Dry Ginger Powder – 1/2 tsp
Black Salt – 1/2 tsp
Pepper Powder – 1/4 tsp
Roasted Cumin Powder -1 tsp
Sugar – 4 tbsp
Method:
To make the perfect Market Style Imli Ki chutney/Tamarind chutney, first take 100 Grams of seedless Imli/Tamarind.
Now, take a bowl and add tamarind and 2 cups of hot water.
Now, close the lid and soak it in the water for 1/2 hour.
After 1/2 Hour, take a grinding jar, add soaked tamarind into it, and make a fine paste.
Now, take a bowl and place a strainer on it.
Now add tamarind paste into the strainer and strain the entire paste to remove the skin and fiber (Add 2 tbsp of water if required and strain the mix).
Now, place a pan on flame, add 1 tbsp of oil, and heat well.
After the oil is hot, add 1/2 tsp of cumin seeds, 1/2 tsp of asafoetida, mix well and saute.
After some seconds, add tamarind paste, mix well, and boil on a low medium.
After tamarind paste starts boiling, add 100 grams of crushed jaggery, mix well and melt the jaggery.
After some seconds, add salt as per taste, 1/2 tsp of red chilli powder, 1/2 tsp of dry ginger powder, and mix well.
Now add 1/2 tsp black salt,1/4 tsp of pepper powder, 1 tsp of roasted cumin powder, and mix well.
Now add 4 tbsp of sugar to balance the taste, mix well, and boil for 2 to 3 minutes.
After chutney starts coating on the spatula, turn off the flame and let it cool.
Now your Imli chutney is completely ready, and you can enjoy it or store it in the fridge for two months.Imli Chutney/Tamarind Chutney
